Here I tell you about lutfisk, or lutefish as some spell it.
It is made from dried fish, a bit like cod. To make the "logs" edible they have to be processed, so the hard pieces of dried fish is put in lye for a period, cannot remember for how long. When the fish is sort of back to its "old self", it has to be thorougly rinsed in water, preferable running water until all lye is washed away.
When cocking the fish, ts is put in the oven, covered with tin foil and baked. Most of the fish disappears, ending up as water, the rest is a white, slightly translucent spongy stuff that tastes absolutely nothing. It is not smelling anything and as I just wrote lacks taste at all, so it is served with a gravy made of milk, flour, spiced with either mustard or black pepper, potatoes and peas.
