Stupid middle of the night question

I can roll any 12AU7/ 12AX7 into the DIY70 driver without adjustment?
I was using JJ 12AU7s, just had 8 NOS GE 12AU7s come in... thought time to upgrade... But I can't remember what the F the pots on the driver board are for... I'm thinking the current between each pair of output tubes?
Thanx for the basic info... Brain is just not working.
