Any transformer experts? Dual secondaries vs taps

I want a transformer that does Se to balanced output. Am I correct that for this job a need two complete secondaries, and not a transformer with a center tapped secondary?

SE-to-balanced is done either way. If you have an OPT with multi-taps, you can connect an 8.0R load between the common and 16R tap. The 4R tap becomes your center point. 0, Xct/2, 2X will work for other loads as well. No need for two separate secondaries unless you contemplate series/parallel operation.
