Would these ones do the trick for a 1626 darling build?

The 5K 10 watt non-UL versions will be fine for a 1626 Darling.

The Transcendar TT-005-OT 5K SE OPTs are perfect partners for the 1626s. I used these in a Clemmy build a couple years ago. [:)

The 20 Watt SE OPTs would definitely be a serious "overkill" (and grossly overweight / oversized) for a 750 mW SET design.

The C354 choke is mounted under the power transformer, via two of its diagonally opposed mounting screws.
I didn't plan for that, it was just "fortuitous luck" ;) (lol)

Ok great, I've ordered these ones:
5K to 8 ohms, Frequency Response 20 Hz to 90 kHz, Maximum DC Bias Current: 90 mA, Primary DC Resistance: 370 ohm, Primary Inductance: 40 H, Part Number TT-012-OT

Next question is, what speakers to use the 1626 Clem with. I don't think my 90dB speakers will work unfortunately (sick)

You see, these DIY projects beget other DIY projects. Time to research a full-range driver project. (lol)

Indeed! I've spent much of the past week doing just that!! There isn't much out there in the way of > 100dB full range speakers. Most of the Fostex and Alpair drivers seem to be between 86dB and 96dB. Anyone tried something > 100dB they can recommend?

How about these?

Would 96dB be ok for the 1626 Clem?
If not, I suppose to 10W transcendar trannies might be ok for a 6L6 Clem?

Yes, for a smaller room you'd be fine with speakers like that for sure.
