i found a 500v 50+50 that should work just as good right?

That should be fine, anything with 450 VDC or higher voltage rating is good for this project.

Just a quick note on using can caps with the ST35, related to our grounding discussions. If possible, try to use a can cap that doesn't use it's 'can' as the ground - there should be a seperate ground lug (and you can 'ohm it out' to the can to verify - make sure it is drained!!). That way you can tie the ground back to the PCB and not let the chassis be part of the analog ground.
