I'm unaware of thermistors "degrading over time." They are widely used for temperature measurement in many critical processes.
If you use a thermistor as an inrush current limiter, and select a higher current rating than necessary, it will take longer to heat up (OK), and have a higher steady-state voltage drop (maybe not OK). Best to examine the data sheets of the devices you are comparing.
